The Taylor 8756 is an ideal solution for high-demand operations, and it is the model to choose when volume decides the purchase. It is also Flavor Burst compatible, for sites that want more flavours from the same machine.

Plan the space and power before it arrives. It is the tallest and heaviest machine on this list: 68-3/8 in high, 26-1/4 in wide, 36-3/16 in deep and 810.0 lbs. The trade for the narrower body is hopper size. The 791 has two 14 quart hoppers, where the C712 and C713 have two 20 quart hoppers, so it holds less mix in the machine at any one time.

Mix is gravity-fed. Taylor's Softech control regulates refrigeration by measuring product viscosity, and separate hopper refrigeration keeps mix below 41ºF (5ºC) in Auto and Standby modes.

With one flavour and the smallest cylinder here, it suits a first soft serve program rather than a twist menu. Optional 4 in legs need a skirt fitted on the right side to stop warm air recirculating.

How to choose a Taylor soft serve machine

Four choices separate these 12 models: where the machine stands, how many flavours it serves, how mix reaches the cylinder, and whether it has heat treatment. Space and power then decide between the models left.

Countertop or floor

The 8756, C712, C713, 791 and 8752 are floor models. The other seven sit on a counter, and each of them can go on the floor with an optional cart. Countertop weights run from 207 lbs for the C152 to 549.0 lbs for the C722, so check what the counter is rated to carry before choosing one of the heavier units.

One flavour or twin twist

Twin twist machines serve two flavours separately or twisted together. Seven models here do that; the 8752, C706, C709, C707 and C152 serve one flavour. If a single-flavour machine fits the space better, the Flavor Burst add-on, sold separately, adds up to 8 flavours to the mix. The 8756, 8752 and C707 are all Flavor Burst compatible.

Pump or gravity feed

Overrun is the amount of air introduced into the product before it is dispensed: higher overrun gives a lighter, fluffier serve; lower overrun heightens flavour and colour. Air/mix pumps provide consistent overrun, while overrun in gravity-fed equipment can fluctuate with draw conditions. The pump models here are the 8756, C712, 8752, C706 and C722. Gravity models are simpler to run: the C707 suits operators prioritizing simplicity and reduced maintenance, and the C723 is simpler to maintain and operate than the C722.

Heat treatment

Only the C709 has it. Heat treatment reduces labour and daily maintenance costs, and the C709's cycle keeps dairy mix safe for up to 28 days before a full disassembly and cleaning. It applies to dairy products, so it suits a menu built on dairy soft serve.

Power and cooling

Three models need two dedicated electrical connections: the 8756, C712 and C713. The rest need one. The C152 and C161 are made to be cord-connected and the 791 comes with cord and plug; the others are made to be permanently connected. Most air-cooled units need clearance at the sides, from 3 in on the floor models to 6 in on most countertop models.
